Chicken And Mushroom Soup
Ingredients
55g/2oz butter
2 onions, peeled and sliced
2 sticks celery, finely chopped
2 carrots, peeled and finely diced
25g/2oz plain flour
1.2l/2 pint chicken stock
450g/1lb cooked chicken, skinned and shredded
1 tbsp freshly chopped parsley
salt and freshly ground black pepper
Method
1.Melt the butter in a large saucepan over a medium heat and gently fry the onions, celery and carrots until they start to soften.
2.Stir in the flour and cook for 2 minutes. Add the chicken stock and bring the mixture to the boil, stirring as you do so. Season, to taste, with salt and freshly ground black pepper, then reduce the heat until the mixture is simmering and simmer for 10 minutes, until the vegetables are tender
3,Add the cooked chicken and cook until heated through. Season, to taste, with salt and freshly ground black pepper. Stir in the parsley and serve.
Red Pepper And Tomato Soup
Ingredients
2 tablespoons of oil
1 onion peeled and sliced
450g/1lb tomatoes take seeds out,chopped
2 red peppers take seeds out ,sliced
600ml/1pint of hot stock
1 teaspoon dried mixed herbs
2 teaspoons of granulated sugar
4-5 teaspoons concentrated tomato or tomato puree
1 tablespoon of lemon juice
salt and freshly ground black pepper to season.
yoghurt to serve
Method
1. Put oil in a bowl and cook for 1 and a half mins,add onion and sliced pepper and cook fro 6 min. add tomato and stir in the stock, herbs, sugar, tomato puree and lemon juice.cook for further 6 mins, then taste and adjust the seasoning.
2.Remove few slices of pepper from bowl and puree the soup return the reserved pepper slices to the soup and serve topped with a whirl of yoghurt.
SERVE HOT
